In this “Magical Village”, the first spark of the revolution was brewed in 1910. Its central location has turned it into the departure point for many ecological, archaeological, adventure and cultural tours. It has an outstanding local cuisine, which includes lomitos (pork loins in tomato sauce), and the smoked pork sausage called longaniza de Valladolid. The smoked meat of Temozón, papadzules (a kind of Mayan egg enchiladas with pumpkin seed sauce), accompanied with a refreshing rice milk and a delicious glass of Xtabentun, a honey liquor with a touch of aniseed.
